Biology is very messy, some people are even born with two heads and we don't sell hats in pairs because of it.

There are two forms in our species, two forms that evolved to cooperate in reproduction, each form designed to facilitate each of the two gametes. It's in this way that sex is binary and determined by gametes, not by the successful production of either of the gametes within the individual themselves.

And again, I must remind you that this is a red herring. This has nothing to do with people pretending they can change sex categories.
