Not an expert at either. I have a Python cert but I haven't used it much professionally. My exposure to Node is pretty indirect; I have to wade around in the cesspool that is NPM for my React and .NET work, and in managing developers I've kind of acquired a "feel" for what Node developers (or at least developers who talk about using Node a lot) are typically like.

Having admitted my ignorance, I nevertheless do have an opinion. I think people who gravitate to NodeJS tend to be self-educated (or bootcamp grads) who skipped over most of the CS curriculum and learned JavaScript as a first language. They struggle with other languages. Their preference for Node is more personal bias than well-considered, educated opinion.

It's similar to the situation with NoSQL. The people who want to use it everywhere are biased because they don't know anything else, e.g. "real" relational databases.

I realize this in an unsatisfying answer. I can't tell you specific things I dislike about Node. I can tell you I like Python. Ultimately, if you made me create a back end, I'd probably use neither. I honestly think it's hard to beat PHP on the back end, if you've got a veteran dev team and reasonable expectations. I've done a lot of C# back-end work and it's OK; I like the language but the tooling and "ecosystem" are appallingly bad. Visual Studio and SQL Server in particular are on my "not recommended for any application" list.
