Gentiles didn't convert.
Those whom you call Gentiles were Israelites which is why he came for them and which is why they believed him.

Romans, Samaritans, Jews, Greeks, etc. all followed him.

Read up on your history. The Israelites were scattered throughout the nations, because of the Assyrian empire.
This is why Jesus is searching for the LOST sheep of the Israelites. Those among the Romans etc that hear his Word are Israelites and belong to God.

They were of different ethnicities. Jesus and his earliest followers were Galilean. Some were Samaritan, a visible race. Others were clearly Romans. This is all clearly stated in the text. Jesus was after everyone, not just his favorite race.

Wrong, Jesus only came for the lost sheep of the Israelites

Okay, but you have to throw out the gospels and write your own then.

He answered, “ I was sent only to the lost sheep of the house of Israel.”

Which is clearly an anti-goyim later addition. It contradicts its own gospel, not to mention all the other ones. I know that at least Romans, Jews, Samaritans, Galileans, and Canaanites are explicitly mentioned.

Luke 7, Luke 10, Matthew 15, Matthew 26

It is not a contradiction.

Moreover, the Lord will scatter you among all peoples, from one end of the earth to the other end of the earth; and there you shall serve other gods, wood and stone, which you or your fathers have not known.

God scattered the Israelites. This is why they are the LOST sheep of Israel. This is why Jesus sends out his missonaries to the many nations to find the lost sheep of Israel among the Nations.

Caananites are Israelites? Where does it say that?

It doesn't say they're Israelites. It says at least one Canaanite believed, disproving your racial idea.
