Proves us having an ethnostate is not sustainable

Israel is the ultimate ethnostate. An ethnostate is simply not being 95% one ethnicity, its a state that's explicitly dedicated to the prosperity and survival of the group. Where the regime aggressively pursues the interests of the dominant group.

Yes, but the high fertility rate in Israel is linked to ultra orthodox jews who have 7 children per family and also traditionalists who have 4+. Without these groups, Israeli Jews would already be at risk of being outbred by Arabs.
