I'm a bad cook. Ironic for a French woman lol

I never learned, and I get too creative. Each day I have to subject myself to my terrible cooking I traumatise myself a little bit more. Yesterday I put carrots in my quiche, my mom looked at me weird. Well, it wasn't bad, but it wasn't really good either. All you could taste was the onion. My mom can't eat cheese anymore so it was just ham, onions, carrots. It was so bland.

My uncle is a pretty good cook though, I visited him a few weeks ago and he taught me how to cook vegetables, make them tasty. So simple yet so effective! Olive oil and garlic, that's it. I asked him who taught him how to cook. He said I taught myself, aah, there goes my dream. I'll have to learn on my own and watch cooking shows. How depressing lol

I like cooking. I don’t really meal prep, but there’s usually leftovers to eat. I didn’t make much today because I don’t feel great, just mac and cheese and “pigs in a blanket” (mini sausages wrapped in little bread rolls). I’m in college, I don’t usually do anything fancy lol. I like baking more than cooking, I made king cake recently, which is a mardi gras thing. Everyone says to just go buy one because they’re hard to bake, but that just convinced me more that I wanted to bake my own...

I made walnut crusted salmon, a quinoa salad and potatoes!! Cooked for my mom and she loved it :)

Oh that sounds amazing. My mother makes a walnut pesto crust salmon and it's sooooo good. I have to get the recipe from her.

I didn't make anything tonight but I made a rotisserie chicken marinaded in Mojo (pronunciation Mo hoe not mo joe) and dusted with smoked paprika and adobo a few days ago. I have a video of it cooking and it's magical🤤. I love the sound of rotisserie.

I've been off my cooking kick for a little while now but Covid has definitely made me a better chef. butter chicken and garlic naan is probably my new favorite meal.

I got into making bread and I am now pretty good at making pizza dough. Currently I'm trying to figure out how to get a nice crust on the grill since I hate running the oven in our swampy warm house.

That sounds amazing!

I really enjoy cooking, too. Tonight I had lemon chicken piccata, with capers and fresh parsley.

Chicken piccata is one of my favorites. Do you tenderize the chicken?

I didn't tenderize the chicken...I simply don't overcook it.

I was pretending I was on the Amalfi Coast the other day, just enjoying it! Truly one of my favorite meals.

I love cooking! I also like experimenting, and I tend towards more Asian themed and often lower carb things. Tonight I made Okonomiyaki, a savory cabbage pancake with a sweet worcestershire like sauce that I made. The batter was made of egg, almond flour and psyllium husk.

I don't always easy low carb, tomorrow I'm having rice and breaded shrimp with broccoli.

I love salmon but I hate salmon that has been frozen and defrosted, to me it is pretty grim. But fresh salmon that is baked is one of my favorite dishes! I made a pretty big batch of imitation chipotle chicken and made some pico de gallo, guacamole, and brown rice to have a burrito bowl for the next few days.

So I've lost nearly forty-five pounds over the past five months (all my weight gain was medication-induced from my autoimmune disease meds, but who cares, the pounds are pounds). Anyway, I really do like to cook, but I never have time; however, something that has literally sustained me for months as a person who really doesn't eat meat and needs nutritious food quickly, is a literal bowl of quick-cooking whole grain rice, heaps of spinach and/or baby kale, and hard-boiled eggs. And weirdly, it has sustained me, because I add lots and lots of seasoning. Garlic powder, onion powder, chili flakes and powder, lots of EVOO and sriracha (I'm addicted to sriracha I think), Himalayan salt, etc. And oddly, when I eat this regularly, my skin looks great and I have a lot more energy, so go figure. And it takes literally five minutes. When I do have time to cook I love to make some nice golden-brown sweet potato fries in the oven glazed with honey. Yum.

That rice sounds really good. I love fried eggs. Congratulations on the weight loss btw. That’s so awesome.

That’s why I’m meal prepping right now actually. I gained about 25lbs from all the stress I’ve had to deal with over the last 3.5-4 years with my dads death, dealing with my mom, then my relationship with my ex and our breakup.

Hey there, I'll send you my recipe ;). And thanks a lot!

Stress is a killer for weight gain and I can so relate. I am so sorry for the loss of your dad. I can't imagine. And all of your other recent struggles as well. I am surprised it was only 25 pounds! It would have surely been a lot more for me! Hang in there <3. And meal prepping = such a life-saver :)
