Step 1: Take a small harvest of hot or superhot peppers. In this case we have mostly 7-pot Brain Strain and a few Fatalii. The 7-pot are about 1 million scoville heat units (SHU) and the Fatalii are about 250k SHU. http://midi.moe/f/cuctm.jpg

Step 2: Put on gloves, slice open, remove seeds, put on dehydrator http://midi.moe/f/tty.jpg

Step 3: Run the dehydrator for many hours on low heat. I put mine in the garage just to be sure I wouldn't cook our lungs. The lower the better, and for truly spectacular pepper powder, you would use a freezedrier (lyophilizer), but I didn't have $5,000 burning my pocket. Step 4: Take a small bladed coffee grinder and grind http://midi.moe/f/qtyih.jpg

Step 5: Grind to a fine dust. Be careful to not open the grinder right after grinding or you will regret it. After many fits of coughing and sneezing anyway, I got this: http://midi.moe/f/lqeld.jpg

Step 6: Then I went on the patio outdoors to pour the powder into a jar. This is a hazardous operation and should not be done indoors. Outdoors, you want the wind sideways from the direction you are looking to. http://midi.moe/f/mtcrp.jpg

This was nice that you gave the detailed process. I used a coffee grinder before, only for cayenne peppers, which is much less hot than what you are working with. And the next time I brewed coffee, the coffee was spicy hot!

I use that only for mixing powders to fill capsules and for making pepper powder. ;-)

I put this stuff on many things. A 1/8th of a teaspoon is enough to make a dish for 4 taste "very spicy" according to my wife.

Sometimes I put it on top of my store-bought hot sauce, which is already pretty potent, for extra kick. Other times I'll put it on what's in my plate as an add-on, such as eggs, meatloaf, anything with a sauce. One recipe wifey and I appreciate is a simple asian-style beef sauté. We put a bit in the cooking pan, so my wife can eat it too, then I add smore in my own plate, so I can feel it too.

A little-known fact is that since capsaicin provides the cellular signal of a burn (an INTENSE burn if you do it right), it triggers healing of the digestive tract by the body. I get ulcers sometimes if I don't create that signal.

On top of store-bought sauce! You must have a strong tolerance for the heat.

Regarding digestive health, I enjoy something spicy usually every day, mostly from cayenne and jalapeno peppers, some from my own garden, and I am thankful to have healthy digestion. I never had an ulcer and have no acid reflux. I sometimes wonder if the peppers have helped my overall health, but I also just feel good after a spicy meal.

Many years ago when I used to drink too much alcohol, I had a brief experience with acid reflux. I gave up drinking and stay sober now.... and acid reflux never returned. But I continue to eat the spicy foods, more so than when I drank, and I now have no health complaints about my digestive system.
