But those traits also differ between, for instance, Germans and Norsemen. So why are they both white? Because of their skin color.

Because they are really close genetically, semites, berbers, some middle easteners and north africans have in some cases skin that is whiter than some europans but we do not consider them white because they are not part of the caucasian race.
