If all cells can turn into sperm and egg, why doesn't that mean everyone is both men and women at the same time?

I have read that all cells, especially stem cells, can turn into sperm and egg. Stem cells can become any type of cell, so that they can become sperm and egg is to be expected. But if all cells can turn to sperm and egg, why doesn't that mean everyone is both men and women at the same time since we all have the capability to make both cells and all that's needed is a laboratory?

It's akin to saying that all people are sausages by virtue of it being possible to grind people up into sausage meat. People are not sausages. Men are not women.

The two sexes are mostly the same.

+99% of the biology works the same.
We note the differences, but overlook the similarities.

Do a search on hermaphrodites if you want to get into the weeds.

There are no human hermaphrodites.

Intersex people are all either male or female.

The way sexual development works in humans is that if they body goes down one sexual development pathway it stops the other from developing.

What on earth are "dinguses"?

Noone in humans has both functioning genitalia at once. Yeah, there are men with disorders that lead to them having disordered "uteruses", but they have no ovaries.

A hermaphrodite is both a man and a woman, and has both set of male and female sex organs. No human can have that.

Also, since a hermaphrodite is both a man and a woman, it's false to call them "women with penises" and "men with vaginas". One part of them is a woman, which has the female sex organs, and the other part is a man, which has the male sex organs, so hermaphrodites are technically "men with penises" and "women with vaginas" in one body.
