Ok, well if you're making bread anyway you have to try these:

It works well with slightly diluted half and half, if you're feeling fancy. Salted butter, 2 tsp salt instead of the one-- flavorless biscuits are a sin. They're good plain, but if you add in maybe 1/2 tsp garlic powder and 4 oz of finely shredded seriously sharp Cabot cheese. Possibly something else, but I'm bouncing around on around 2 braincells right now and most recipes that I alter are just grandma-style where it's random piches and handfuls of whatever I'm feeling at the time.

Edit: Don't fuck with the dough too much. Get it together, fold it over 4-5 times, and roll it out to about 1/2 inch. Use a sharp knife and just slice out the biscuits that way.

It might have been 2 oz of the cheese. I was thinking about the size of the block and the thought struck me. 4 oz might leave you and your wife not able to shit for a few days, and overly cheesy.

I can't vouch for how they'll turn out using self rising flour. I think you'll have to watch your baking powder ratio, since it's got some in there already.

It'll have to be better than my last attempt. Unlike my moms and grandmoms biscuits, they were like hockey pucks and pretty flat.
