Hold the phone, that's not gatekeeping. Firstly, we aren't talking about criteria for group membership, but more importantly a lot of what he says is correct. You don't scrape a non-stick pan with metal utensils. You wash your rice beforehand so the surface starch doesn't cook with and bake onto your rice. If you've ever had rice that was too sticky and chewy, it was because it wasn't washed correctly (or possibly at all).

I've had plenty of rice that was cooked the wrong way. Too much water and prepared on a pot like this, not enough water, not washed, not washed enough. If I can serve two versions of a dish and an overwhelming majority go for one over the other, that's the correct one. The rice in the video would not be the winner at any egg fried rice competition.
