A real gem of a game is Hollow Knight. Its a 2D platformer so it might not meet what your asking for. But man, some areas offer that tranquil felling you seem to be looking for. (The areas of Green path and The Queens Garden)

The game has a lot of similarities to Super Metroid. The gameplay is the same but with a totally different feel and theme. Toss in a great sound track and hand drawn set pieces and backgrounds and beautiful lighting effects and the games really shines.

Just be sure to give it a full hour before judging it. I playing it for 20 minuets my first go and was like "meh". I went back to it about a week later and didn't set it down for weeks!

What emulator would best run it? What platform is this?

I play it on Xbox game pass. You can also by it from steam for around $8 (sale price) for PC. I'm sure it would be sold in the xbox and Playstation stores as well.

I haven't played BOTW so I can't compare the two, but the Skellige Isles in The Witcher 3 were some of my favorite areas to explore. If you're playing on PC, there are some HD texture pack mods that make the game even prettier.

You can play BOTW on CEMU emulator using Wii USB Helper to run it better then the Wii U's hardware especially if you patch it with the 'Relics of the Past Mod' that changes the balance of the game on both Normal and Master Mode. I shudder to even THINK on what Relics of the Past on Master is like! Warning: You'll feel ripped off on the vanilla edition when you do though.

BOTW has a ongoing DLC mode that is literally acting as a 3rd DLC called Legend of Zelda Second Wind which adds new stuff and enemy variety. They just recently added 'Trial of the Ancients' and a new 'Hinox King' somewhere's in the world at something Navel I can't remember what it's called. I haven't seen any difference between him and a regular Hinox other then being bigger then usual. He's still the 'big baby' that tries to sit on you.

Look up Relics of the Past there's a guy I think Croton or something like that that is soft spoken and funny playing Relics of the Past it will open you up to new concepts.

I have The Witcher 3 and CyberPunk 2077 but haven't got far in either. I like both worlds but the combat/movement is less than intuitive so far.
