In a way it's understandable - there's no mention of sex or of being a particular sex so this "gender identity" could be a psychological condition that genderbread.org is trying to advise young people about. In a round-about way it's highlighting stereotypes.

However, it's terribly sad that this concept isn't being used to get rid of sex-based stereotypes when it could so easily be used to show that boys or girls don't need to be constrained by blue or pink, and that the only difference between them is the role they might play in reproduction.

It takes a lot of effort to constantly deny reality so naturally enough they will try to maintain the accolade whilst lowering the effort. Fortunately this (you example) is, imho, a sign the whole shitshow is crumbling down. Not one person believes that straight men fantasizing about lesbians are actually lesbians, and the more they do this the more society is peaked.

It might be more productive to ask them to first define their terms before engaging them in any debate. Ask them what they mean by the words they use and make a joke that anything can be something else when you redefine words (e.g. "of course a squirrel can be a pumpkin if you custard your wibble sticks"). Most Tras are terribly sad and lonely people who long to be exceptional but lack the ability to be anything other than ordinary followers. Mock them and they'll follow the most powerful laugh.

I seem to recall, a while ago there was a test done by a male and a female regarding how the information they gave (in IT) was perceived by customers based upon if the customer thought they were male or female. Not surprisingly the customers wanted extra information or a second opinion if they believed the recommendations they received came from a woman. It's quite likely that your professional opinion will be diminished in value you are forced to state "your pronouns" to strangers or customers. As sad as this is, it may be sex discrimination to make you declare your sex to strangers on the basis of their possible inherent misogyny.

In Scotland there's a Gender Representation on Public Boards Act which redefines "woman" to include biological males who only have to express an intent to transition (they don't need to actually have transitioned or even provide proof they have an intention to) to apply for jobs reserved for women to increase female representation. This is being challenged by ForWomenScot in the courts. Scotland is also looking to introduce a crime called "stirring up hatred" and one of the protected characteristics will be Gender Identity. Worryingly, there won't need to be any intent to cause harm or any hatred stirred; a person could be arrested for how likely it is for hatred to be stirred up. This is the Hate Crime and Public Order Act and has just finished its public consultation with just about everyone and their dog opposing it.

The UK/Scottish government now records criminals and victims by self-Id rather than sex (this is policy rather than law though) and rather unsurprisingly there is a rapid increase in violent/sexual crimes being committed by "females". I expect this will lead to ridiculous actual government policies to address this issue in the near future, like maybe 'we should be teaching our daughters not to rape', or some such bollocks.
