You are right about my limited meatloaf experience. I've only had my mom's and I disliked it so much I never wanted to try any other versions. I'm going to continue avoiding it for the foreseeable future but if AmericanMuskrat brings some to the saidit meet and greet, I'll try a slice.

With my mom it was steak. For whatever reason, she would cook steaks to death, then another 5 minutes just to be sure.

Definitely not red anymore. I think she must have feared undercooked meat. Mainly it was just a pan frying issue, as roasts and other cooking methods were fine. But I do remember the numerous hockey puck qualities some of those steaks would have.

It might have been the type of meat too. Sometimes the real lean steaks shrivel into expensive leather strips, especially in a pan. There's a trial and error process sometimes with steaks that's a pain in the ass.

That may have been the case. I think it was mostly when I was still young, because I don't remember any of that as I grew older.
