This soy sauce I have, it's made in ancient wooden vats where the grooves have picked up and cultivated innumerable generations of bacteria and aged for years. Gives it an interesting character.

The brand new, cheap soy sauce, the kind you find in take out packets is hydrolyzed soy bean. It's like the vanillin of soy sauce. Tasty but simple and boring, plain.

Sure, it makes sense you want the chicken McNuggets of putang, but a refined palate can enjoy a more flavorful entree.
