Your right; the issue isn't gluten itself. Our ancestors consumed regular, gluten-filled bread for generations. Some things have changed: most ancient breads were sourdough in some way, and these bacteria helped break down some of the gluten before we digested it. The grains they used were also more nutritious and grown on less depleted and degraded soil. These factors, combined with your correct statement regarding the destruction of a healthy gut microbiome, produce our current health situation (at least in part). The best way to restore gut health is through dietary changes: consuming raw milk, fermented foods (such as sauerkraut, kefir, and kombucha) pastured meats, and animal fats combined with nutrient dense foods (liver) is a diet that can restore failing health and body balance. As the amount of environmental toxins continues to rise and assail our bodies, having a healthy, natural diet becomes increasingly important.
