Good work. Yes, Chitin is what I was thinking of but you are way ahead of me with the chemistry. So, do you think the chitin content of the bug diet will kill off even more of us. I think Gates et. al are serious about getting the world population down to around one billion. Again, good.

My understanding is it's actually a beneficial prebiotic in small doses, but larger doses it's likely to trigger an allergy (same as a shellfish allergy).

So get millions of people dependent on it as a protein source, even though many will become deathly allergic to it? I don't think it's intended for depopulation per se, more a facet of being in control of the food supply, by destroying the conventional means of supply.
