You can also cover them with a lightly dampened paper towel tucked under a plate for a steam effect. The price of baked goods now makes day-olds a relative bargain. We stock up on bread from a local bakery on half-price day and freeze the loaves. Spouse might get back to the NYT no-knead bread recipe this winter.

I think I could live on (homemade) bread alone - probably not really but I would enjoy trying. Traveling around the Gaspe Peninsula one of the most remarkable things was the number of people who had bread ovens in front of their houses and sold huge loaves of French bread to tourists. The other interesting thing was the uniquely distinct church architecture that seemed to be present in every town. Probably a coincidence, like an area near me that reportedly boasts the highest number per capita of churches and poultry.

Makes me almost wish I were back in VT and an easy drive to that part of the world. I've been a carboholic all my life, primarily good fresh-baked bread, not pastries. A diet heavy on bread and cheese, no vino necessary, sounds fine to me. The smell of bread just out of the oven rivals that of coffee for me in heavenly food scents.

I agree with all of this. Totally with you on bread vs. pastries, which have limited appeal for me, something I enjoy only occasionally.

I feel the urge to dredge Snyder's mini-pretzels through baba ganoush as an appetizer before I put cheddar on honey whole wheat bread topped with a chunky slab of tomato from the garden, stuff that concoction into the microwave for 30 seconds, and call it lunch.

Something to consider if I survive my spouse. Space is an issue otherwise, unless you'd take an unheated garage or a walled tent in the backyard?

My bones and joints would protest, unfortunately, and I'm not sure the culinary benefits would outweigh that.
