There's only one way to handle this. If we/you decline sex with a trans person and they scream out that you are transphobic because of that....just say, "Yeah. So?"

Calling someone transphobic is their game winner. Their ultimate weapon of words. So disarm them. End on the high note of just agreeing with them.

We all know there is no way to defend ourselves from that accusation. So don't try. Just shut them down and send them in the way.

Repeat after me -- "Yeah. So?"

I might be tempted to add, "And of course you wouldn't even want to have sex with someone who's TRANSPHOBIC now would you?"

(Though I suppose that's really implied, isn't it?)
