It's not a bad cheese, a good mature cheddar flavour. Wookey Hole caves are a few miles away from the village of Cheddar, home of cheddar cheese. Both Cheddar and Wookey Hole have ancient natural caves which have been inhabited by humans for millenia, palaeolithic tools were found there dating back around 45,000 years. Pretty cool place. Now they make cheese there.

Cheddar cheese, with its distinctive mature flavor and rich history, holds a special place in the culinary and cultural tapestry of England. This delectable cheese, originating from the village of Cheddar in Somerset, has captivated taste buds for centuries and continues to be a beloved staple in kitchens and cheeseboards worldwide. A Journey Through Time: Cheddar's Ancient Origins The story of Cheddar cheese begins in the depths of time, with evidence suggesting human habitation in the Wookey Hole caves, located a mere few miles from Cheddar, dating back an astonishing 45,000 years. These ancient caves, adorned with stalactites and stalagmites, served as a refuge for early humans, who likely discovered the natural wonders of cheesemaking within their cool, humid confines. The Art of Cheesemaking: A Delicate Balance The production of Cheddar cheese is an intricate process that requires careful attention to detail and a deep understanding of the delicate balance between science and art. The cheesemakers of Cheddar have perfected this craft over generations, using traditional methods passed down through the ages. Fresh, high-quality milk from local cows forms the foundation of Cheddar cheese. This milk is gently heated and then inoculated with a carefully selected starter culture, which introduces beneficial bacteria that initiate the fermentation process. As the bacteria feast on the lactose in the milk, they produce lactic acid, gradually lowering the pH and causing the milk to thicken and coagulate. The resulting curds are then cut into small pieces, releasing whey, the liquid component of milk. The curds are then heated and stirred, a crucial step that determines the final texture and consistency of the cheese. The skillful hands of the cheesemaker ensure that the curds reach the desired consistency, creating the perfect foundation for the distinctive Cheddar flavor. Maturation: A Symphony of Flavors Once the curds have been cut and heated, they are pressed into molds and left to mature. This aging process, which can last from a few months to several years, is where the magic truly happens. During this time, the cheese undergoes a series of complex chemical reactions, developing its characteristic sharp, nutty flavor and crumbly texture. The maturation process is carefully monitored by the cheesemakers, who regularly inspect and turn the cheeses to ensure even ripening. The temperature and humidity of the aging environment play a crucial role in shaping the final flavor profile of the cheese. Cheddar: A Versatile Culinary Star Cheddar cheese's versatility is one of its greatest strengths. Its bold flavor and distinct texture make it a welcome addition to a wide range of culinary creations. From classic grilled cheese sandwiches and macaroni and cheese to sophisticated cheese boards and gourmet dishes, Cheddar cheese adds a touch of sophistication and indulgence to any meal. A Culinary and Cultural Icon Cheddar cheese has transcended its humble origins to become a culinary and cultural icon, enjoyed by people around the world. Its unique flavor and rich history have earned it a place of honor in the pantheon of great cheeses. Whether you savor it on its own, incorporate it into your favorite recipes, or simply admire its intricate aging process, Cheddar cheese offers a sensory experience that is both timeless and utterly captivating.
