Find some interist you and yours like doing, time flys fast. Beer brewing,cooking I still think of other crap but when I'm off roading my mind is on driving.

I can be wrong but it soulds like you are letting life control you, 12 years ago I was working 15+ hours a day and my wife made me see myself. Now I have to Google computer answes because I don't keep up with tech. I so to speek let computers control my life. I recamend dwell less on projects and more on things you and the wife like doing together.

It seems like projects pop up faster than I can take care of both at home and work. My wife confronted me the other day about both my mental and physical health, and reminded me that I need so set aside some time for myself.

Funny, I'm retired and my hobbies take most of my time. Now I've been brewing for years and enjoy extract brewing, 30-45 minutes and done.

As I got older and started a family and career, my hobbies took a backseat. I only made beer from extract, but I would make wine from scratch, minus the yeast.

So why did you stop brewing ?, I'm 67 and slowly giving up all grain brewing and moving over to extract for a easy brew day. One hour vs 7 hours.

Generally speaking most all Apfelwein is 7-9% ABV, this one was for a friend who wanted high ABV.

I use a food grade bucket with hdpe 2, I've got a 2 gallon and a few 6 gallons and a few 1 gallon glass jugs. The ebay link you posted I would stay away from that thing, you don't know the quality of it. Now how I make my wine is buy Juice from the market and I like using nottingham ale yeast or munich classic wheat yeast. Add yeast and wate a month then rack to secondary jug.

I believe I'd risk a rather severe penalty for running a still in a residential area due to the (minor) risk of explosion.

I just use gallon jugs right now. If I need a separate fermentation container I'll use gallon freezer bags. I use those for tepache and that's how I figure I'll do the ginger beer, a goodly amount of smashed ginger up and left to soak for 3 or 4 days. Ginger really gets things fermenting fast, it's covered in yeast, and it's potent. Tepache is similar just with pineapple scraps, cinnamon, hot peppers, and less ginger.

I'm sure there's a proper recipe for ginger beer but I was going to wing it. Let the ginger's natural yeast take it as far as if can get and then possibly switch to ec1118 to get the abv higher.

How do you make your wine? Do you use a 5 gallon bucket for primary fermenting and a 5 gallon carboy for secondary fermenting? I am interested in how you make the ginger beer. I have never heard of tepache. It sounds like something I'd like.

I make small batches of wine/cider. Apple, cranberry, grape rarely, tepache, and I have a big old hunk of ginger I was thinking of turning into some ginger beer.

Distillation interests me but I don't have anywhere to do it.
