Combat sport is entertaining because it's pretty fun to watch two people try to essentially kill each other. It's primitive as fuck and has been around since forever, I wouldn't surprised if we enjoyed the violent nature of it. It's not something you always see on a daily basis in a civilised society, which is probably why it's entertaining to watch when you see it on TV. Humans have always fought, it's in our blood.
