It really is. I do a dozen of these jars at a time. Not necessarily for “prepping”, but to just have something on hand that is better than eating out when I want Mexican food.

There’s nothing like a home made meal, you could do this m, stew, chili, vegetable soup, and pickled eggs! Lol. I’d be in heaven.

I’ve done a pot roast in jars, but I didn’t really care for it. I’d have to alter the recipe on tat one, unlike this carnitas recipe, where I didn’t deviate one bit.

It's a good method for preserving meat. My parents like do do similar with deer and rabbit. They leave the seasoning for after it is opened though. I have half a jar of rabbit im my fridge now that I'm thinking about making tacos out of.

I’ve never had rabbit. It’s a hard sell for me when I see the whole frozen rabbit for sale in the store and it looks like a skinned cat or other rodent!🤣 maybe if someone cooked it for me.
