Exactly. They used to have reddit posts, maybe still do, of people making fun of their grandparents for having super expired food in their pantries, but that's the point of it. It's not for casual consumption, but in case of extreme emergency.
It's pretty hard to miss signs of spoilage with modern canning. Unless it's so contaminated from the BHP lining the concentrated synthetic estrogen makes six cherry red titties spring up from your back.
