Get a dumbphone. No app store, no browser. I recommend a kosher phone, a Light Phone 2, or an older 2g dumbphone if you can get it to work ( see here ). Keep your smartphone if you need it, but get a backup device with no apps, minimal tracking, and minimal tech.
