I think you're right about the onions. White Castle cooks their meat on top of a bed of onions and besides flavoring the meat it steams it and gives it a softer texture. I was doing the meat on a sheet pan in the oven as one large block of meat to be cut up later for simplicity and I wasn't sure how well it works with a bed of onions underneath.

Well, next time, slap some onions in a skillet and do your meat up on top of them. See if that makes a difference.

Decided to take a bit of inspiration from you and do some "sliders" of my own today. Probably only close in concept, but came out pretty tasty regardless. Used a mix of bell peppers and onions, some store-brand "spam," and buttermilk biscuits, with a bit of basic American cheese to round it all out.
