Does suffering, hardship, and being born to very unlucky circumstances *really* make someone stronger and more capable? Or is that just a cope?

You can choose to rather be the 6' 200 "IQ" guy without privilege rather than the utterly disabled abomination-looking guy with privilege. You are choosing less pleasure by doing this.
