Interesting things:

In May, the court was told that Miller identifies as transgender and in the process of transitioning to female. He had owned a butcher's shop in Melrose which had been closed for several months before the abduction. At the time of his arrest, he was presenting as Amy George but confirmed he wished to be addressed as Andrew Miller using "he" pronouns for simplicity.

Which explains why the BBC is going with he/him pronouns despite this being a Troon.

And apparently the judge considered the fact that he dressed as a woman as an aggravating factor as the victim said they would never have got into the car if they realised the attacker was a man. The judge also called out this nonce’s fetishistic behaviours.

A woman is someone who identifies as a woman.

A tree can be a woman. So can a hat.

You can find women in everything.

Edit: per this article a butcher shop owner can be a woman.
