Alternative: use a public instance, but access it via Tor so you don't care whether or not it collects data.
Also, what are the chances of your data being collected? Can it be done without modifying the code, which anyone can check? If it's too much effort, it seems unlikely to me that someone will build a rogue instance just to spy on the occasional user.
