How did Christianity get us here? If that's true why didn't it "do it" sooner?

Christianity has no means to enforce its own cultural values. As society fell, the church went right with it.

So would you have liked Christianity when it had Knight and military orders like the Templars?

The Templars worshipped Baphomet, they weren't Christian.
