In the event of a collapse of the magnitude you are preparing for, fiat currency would have no real exchange value, you would be looking at a barter economy. You might be able to use cash this way for a while, but people will quickly catch on that cash is worthless.

I suspect goods would change hands at gunpoint (or knifepoint). A true cashless society...

Yes there would definitely be goods changing hands in this way as well. Would much rather have a gun and ammunition than a pile of cash.
