What did you do? Like just pat it dry and set it in your fridge?

There were two steaks in the package, I patted them down, salted and peppered them, and left them uncovered in the fridge on top of one another with paper towels on the bottom and in-between for a few days.

I haven't made them yet, one I froze for later, the other I plan to separate the top sirloin which is more tender from the triangular shaped bottom sirloin (aka tri tip steak) because it's rather large for my 12" inch skillet and overcrowding will steam the meat instead of searing like I want.

Figured I'd eat the top sirloin as is and use the bottom sirloin for taco meat.
