Pina Colada Ice Cream

Pureed pineapple, coconut milk, heavy cream, sugar, splash of rum. Made in a small electric ice cream maker.

Is there any reason you used coconut milk rather than cream?

This particular recipe called for milk instead of cream. I had bought both in case I decided to use a recipe with coconut cream. I also bought sweetened condensed milk, but didn't use it. I may try another recipe next time as this was a tad bit icy due to the watery texture of the coconut milk and the alcohol in the rum.

I bet that was delicious. I love Pina Colada. I recently finished the last coconut pineapple tic tacs in existence, which is kinda sad cause they no longer exist, but kinda cool I got to be the one to do it.
