Nice! So, the problem with using seed from store bought veggies is that often they're hybrid. It's still doable but you should look up info on growing from hybrid seeds.

If you got it to grow, you might can keep it going. After a few generations (7?), it's stabilized or something like that.

I try to plant mainly heirloom seed, so that I can save seed but think that it would be cool to experiment with creating different varieties someday. I'm still learning, though, and having live plants is an achievement.

I have not had issues on using seeds from store bought produce. The fancy varieties may not be true to seed, and some things like apples never will, but there's no special characteristics here that I'm looking to preserve.
