I don't usually use recipes, although if you're interested, I can get my grandmother's recipe this is loosely based on.

I hear you. I’m not a strict recipe follower. Just like to see and hear what other people do.

Meat mixture? Special seasonings/secret ingredients? Critical technique?

Sauce from scratch?

I cut a few corners, but it's supposed to be half beef, half pork with breadcrumbs, two handfuls of parsley (grandma's measurements lol), egg, diced onions, Worcestershire sauce, and seasoned with oregano and garlic powder. The meatballs get fried and then finished in the sauce. The sauce is from tomato paste, not sure if that counts from scratch.

That sounds pretty close to how I do it. Sometimes the grocery store will have a beef/pork/veal mix I’ll use if it’s available.

I’ve been making sauce from canned San marzanos lately. They showed up in my local Costco at a pretty decent price, so I’m into doing batches and freezing now.

I tried canned san marzanos for a pizza sauce because of how people rave about them, but I couldn't tell a difference personally

I wouldn’t try making a pizza sauce with them, but for a chunky marinara I like them better than the Hunts diced tomatoes I was using. I’m not going to rave about them or try to sell you on them, but they are good. Needs a little sugar, though, which I typically don’t add.

For pizza sauce I swear by cans of Don Pepino lol
