Many people do. I love having a rooted device, usually my previous phone. I keep two devices usually. One my current phone that I keep secure and access my personal accounts on. Then the other is my previous phone that I root and install most of my apps and mods on. Having a rooted device gives you a ton of more options for how to use it. Personally I mostly use it for gaming as it helps with automation and allows th various hacking applications to work fully. Customizing the looks and sounds are fun, clearing out the bloatware is nice for increasing performance, You can do a lot in parallel space but only so much and you can never improve the phones performance in parralels. However you do lose slight quality for things like Netflix and you do put your phone at higher risk if you install untrusted apps. So I wouldn't use a rooted device for my personal email or banking or if I only kept one device. A lot of people are hesitant to try rooting their phones because of the risk of bricking the device, but the xda forums usually have very well done instructions for phones that have rooting methods. The main issue is that Android phones vary so much, and so does the methods to root them.
