There's pro bikers with velomobiles that can go highway speeds without motors. The center of gravity is lower though and 3 wheels to make them legal. I disliked the "fast food" and "lower class" mixed with what we know at the time to be high quality food, and wine. It also looks like they stumbled upon food cellars and not thriving businesses at all. So I enjoyed the discovery but think the conclusion is mistaken.
