You're sixteen years old. In most countries that makes you old enough to make your own medical decisions without parental approval or consent. They're gaslighting you in an attempt to demoralize and defeat you without having to physically harm you. If they truly loved you and believed your confidence and trust was important, but believed the vaccine was also safe, they'd have offered themselves up to the vaccine first. Then after several weeks, or months, show you that you were being misinformed from their continued health.

The thing to never forget, no one promised that life would be easy, in fact it's going to be hard and in the years ahead you will discover many of those you previously knew will suddenly declare you their enemy. As the old saying goes, misery loves company, and the miserable can do some evil things to make that company.

Offer them a consideration. Tell them bluntly, you will only vaccinate after they've done so first, and should there be no complications during 12 months following, you may consider getting vaccinated as well. Make no promises or anything that can be conflated for a promise. Then declare the discussion as closed as far as you're concerned. The only thing that can do is throw you out or evict you from the home. The problem is, once that occurs, they'll have removed any doubt who and what they love, revealing that for all the affection they may have showed you in the past, you weren't someone they were truly capable of loving.

In the long term, as this vaccine is understood to be as dangerous as the indy media reports, you will find numerous educational and employment opportunities develop for you as you won't be irreversibly crippled by this bio-weapons experiment. In the meantime, focus on securing your drivers license and using your summers to find out how employable you otherwise currently are.
