I recommend a Google Pixel 3 with GrapheneOS. Yeah yeah I know, Google phone but Graphene removes all Google services from the operating system and provides extra privacy and security hardening features. I guess you can't really trust any hardware manufacturer with closed source firmware, but it's the best thing I've found.

Pinephone and the Librem 5 are promising for Linux smartphones, but they're really not ready for daily use yet IMO. If you like to tinker and can deal with some bugs, it's great to support their development though.

Does Graphene degoogle all phones? What do you think about a rooted one plus that is degoogled?,

No, it's just for Pixel phones. For other phones, you can try LineageOS. I don't recommend rooting, because it can be a security issue.
