Are they evolving to eat plastic, or are we just discovering that they eat plastic?

We were told in the 1990s that nothing at all broke down oil. Then we were told that bacteria had been engineered to eat it. Then we found out the were lying and had only discovered a species that had been eating it the whole damm time.
