That's a Mercer Renaissance, almost identical to the Wusthof Ikon Classic, but it costs $50 instead of $200. Same german steel, very similar geometry. Probably the nicest Western style kitchen knife you can buy for under $100.

If you want Japanese steel there's options, but the Western styles are more versatile. If you're only going to have one chef knife, it should probably be a Western one. Although if you're going to have 2 or more, gyutos are nice to have.

Most of my family is of the mind the best sweet corn is grown in PA, whereas I think Texas grows some of the tastiest corn. Mexican street corn, elote, is seasoned and grilled corn. I don't see it much outside of fairs.

Ok. You've started me down a rabbit hole. It seems that there are so many varieties of mushrooms, each region needs its own guide book so I'll start with that. I also saw plenty of books on edible wild plants, too, but that's too much for me at once. Of course, this search led me to look at herbs again, and I think I'll drag out my little greenhouse and start a bed today. Maybe I'll document that on video since I think that will help me stay on track.

By the way, the State University here has an agricultural extension office that give free help with farming including free on-site advice and soil sampling. Years ago, I looked into growing Shiitake mushrooms as they offer free starter plugs. Like most everything else I've looked into, I never got around to starting that project.

I've grown Oyster mushrooms before on the kitchen counter. Super easy you should try!

As for IDing mushrooms, ID ALL mushrooms. especially the non-edible ones. Those are MOST important to identify. Over time you just learn to recognize. Varous groups and forums across the internet.

Get lots of photos of all mushrooms. Note their time of year, location, whats near by, take pictures of one single specimen at a time. picture of the cap, the side, the stem, and the gills. take pictures of it before moving it for any further photos.

The world of food stylists! These folks make a ton of money to prep the dish to look aesthetically appealing. Ice cream is mashed potato with food coloring, coffee steam is cigarette smoke, grill marks are painted on.

Photo or shooting sessions for ads can eat up time so the food won't end up looking consistently good. So they opt for stuff that looks the same for three hours without ever having to microwave or reheat it. Why not just use wax/plastic replicas? I don't know the answer to your question, but FWIW here are some unsolicited tips from a fellow seed-eater:

I'd recommend grinding them in a coffee grinder before consuming as this vastly increases the nutritional availability.

I love to grind up say 6-9 TBS seeds and add tepid water for an excellent and satisfying raw "porridge." Since hot water makes it kind of globby (especially if flax and chia are involved) it's best not to use very hot water. You can also pre-soak dried fruits in a separate bowl of boiling water to add to the porridge. (That water can be used for the porridge if you can wait long enough for it to cool down.)

Of course if you have excellent dentition and chew everything 100 times no grinder needed ;)

This is a great article. I started skipping breakfast a few years ago. I thought it would be difficult because I work a physically demanding job, but it actually resulted in me having more energy and focus in the morning. In the spring and summer I can delay eating until lunchtime. In the cold weather, I need something warm to drink in the morning (like tea or broth) and a light snack sometime in mid-morning. Now I generally have a light vegetarian lunch and a big dinner. Two meals a day really feels very good to me.

It caught me off-guard, actually, how much better I felt after cutting out breakfast. I assumed it would take time to acclimate, but I felt the benefits of it from day 1. I think it is more important to get and stay hydrated in the morning. Water with a little bit of apple cider vinegar has helped me feel refreshed and also suppress my appetite on the days where I do feel hungry.

I've definitely become skeptical of the "three square meals a day" idea that has been pushed on us since birth. But when you eat like that with all your meals spaced out, it means your body never gets a rest from digestion and you rarely (if ever) experience what actual hunger is. I think this just leads to eating becoming and exclusively an act of routine and pleasure, and not because it is something you actually need in that moment.

it was propagandized as the most important meal of the day to the worker class (the 99%) so we have the energy to work all day.

imo its more important to rehydrate in the morning.

yes i did :-)

i also made all kinds of ferments. water kefir, kombucha, apple cider (i still have over ten gallons), fruit wines, sourdough, beer and also just lots and lots of fermenting for whiskey, rum and brandy. i never made sauerkraut because its so cheap and available in my area

Did you eat the grains straight up? I have a hard time doing that, they're just so chewy and weird. The website I linked here talks about dehydrating them with spices to make a crunchy snack. It also talks about using the grains as a starter for sauerkraut in place of salt. He calls it kefirkraut. As a big fermentation enthusiast, that I idea is really compelling to me. I'm definitely going to have to try that one.

I eat local so I can get to know the people who make my food and the practices they use. This way I can avoid herbicides and pesticides and inhumane meat factory practices. It also helps me get fresher and better quality vegetables.

mostly just drinking and eating all the extra grains. i think i used it a few times as sourdough in a no knead bread recipe

I found this great website from this guy who really seems to know his kefir. I've been making my own kefir for years, and I really appreciated hearing about the history and mystery of kefir, as well as all the scientific information and the practical uses and recipes! Even after making my own for so long, I found this page to be a wealth of information that deepened my knowledge of kefir making. Its given me a renewed interest in kefir experimentation.

Is anyone else familiar with kefir? Do you make your own?
