Inversely: So why NOT have a fake plane? The drone would be sure not to have human error or last minute cowardice from carrying out their evil intentions.

Because the technology would have to be bespoke, and therefore expensive, and full of errors. (Unless you've got the details of the testing and development of the technolgoy.
