How can you escape a global police state?

You can't. Like any animal forced into a corner you do whatever you have to do. People like Snowden are on the front lines. A true patriot who swore an oath to fight enemies both foreign, and domestic. Best you can do is educate yourself on how the systems work. Don't listen to the crazy conspiracy theorists about the telemagneticphoton rays beaming memories from your refrigerator. When you understand how it works: join them. See the world from the inside. If you see something big, do what Snowden did. Leak it.

That's how we can fight. By telling the world what's really going on.
