So let me get this straight. The stabber returned to the scene to speak with police about what happened. Then, the knife that was used in the stabbing was disappeared by the crowd.

Why would someone on the protesters side take the knife, if it could lead to prosecuting the stabber? Something is fishy. Maybe the knife was pulled on her by one of them, and could then be used as evidence of defense, or evidence of initiating the assault by the "victim".

Maybe the urge to steal overrode their other urges in that moment. You can't blame them for it, it's because of systemical reasons that they do this of course.
