So these are organic russet potatoes deep fried in organic beef fat, just as the original Belgian Fries are and always have been made.

We ordered Montreal-style Smoked Meat (smoked & seasoned brisket in a style that pretty much doesn't exist anywhere else) to go along.

I like to use tallow for cooking sometimes. If you didn’t know, McDonalds used to cook their fries in tallow until the early 90’s. I’m in my early 40’s so I was lucky enough to get to have their fries when they were made that way. Younger generations who think McDonalds has good fries wouldn’t touch them if they got to experience the way they used to taste.

And no, I’m not a food snob and I don’t mind the way their fries are now. They just used to be better IMHO.

I thought they just used beef broth or flavoring in the mix. Beef tallow would seem to be very expensive to use in fast food. Hydrogenated soybean oil was readily available before the nineties. Btw, I’m old enough to remember when our local McDonald’s started serving breakfast.

Beef tallow is... FREE. Most butcher shops throw away a ton a week or so. Of course the organic kind isn't free but that's another story.
