Eggplant is one of my favorites, but you have to know how to cook it.

I wanted to ask you how you will cook the eggplant or if you woukd upload a picture of the cooked eggplant, but I did not want to burden you with more work. But if you want, I am interested to see how you prepare it. u/Zapped also might be interested since he especially likes eggplant.

hahah zapped was just asking me the same thing in chat. i have 1 eggplant plant on accident, it overwintered itself, which is cool, but I am not especially growing eggplant on purpose.

I cooked one a week ago more or less like squash- slice it, oil it, spice it, put it in the oven. It came out okay, kinda dry, but nowhere near as good as it comes from a Thai restaurant. It seems hard to cook properly imo.

My wife made some oven baked stuffed eggplant last year from our garden (Japanese eggplant) that was really good.
