Hello, fellow pepper gardener! I do eat Jalapeños fresh, usually sliced, fried in oil and mixed with other food. In past years I gave some away to those that like Jalapeños. And when I stored them, I froze them in slices, which kept surprisingly well. I was thankful to have a taste of summer in winter. I took the resealable bag out of the freezer, grabbed a handful of frozen Jalapeño slices, and fried them up... It felt like a treat in winter.

If you have an abundance of peppers you can bring a pot of vinegar to the boil, drop in some sliced onion, and your peppers. Let it cool and pour it all into a big pickle jar. Put it in the fridge. You will have pickled peppers for months and the peppered vinegar itself is great. I did that a couple of years ago when I planted too many serano peppers. Serano make short bushy plants but they get loaded with peppers.
