Japanese are non-white? What color are they? Given equal amounts of sun, Caucasian are swarthy but Japanese are pearl white.

I never heard anyone refer to Japanese as being White. Historically, it's always been "yellow", although funny enough, they tend be swarthy too.

Especially the indigenous Japanese or Ainu.

Japanese can go on a ski weekend and come back with a suntan. It's the melanin of course. The swarthy look comes from sun and weathering. Ainu aren't Japanese. Compare the words Ainu and Inuit then look at a map showing the Aleutian Islands. I won't belabor the point but neither of us knows why they were called yellow. Cheers and I hope no harm done.

can't just look at skin color, white also means caucasian features, like rounder eyes.

I did not say Jpn were Caucasian since that is patently untrue. I was simply asking about their skin color that is ultra white (when sun exposure is controlled for) generally and certainly not Yellow.

Looks light brown to me, in any event, it's like how white people aren't actually the color white, more like a tan, pinkish hue. But these colors get used to describe people as shorthand so we know who we're talking about.
