I'm an organic farmer who believes in agroecology, animal integration, soil regeneration, and pasture farming. I can say first hand that the Big Ag chemical and seed companies only care about money and monopoly. Their products destroy soil and the life within it. As the soil degrades and the life dies, the crops become more dependent on these synthetic and toxic chemicals. It's a vicious cycle that can only be broken by natural processes and practices. The glyphosate is, like all pesticides, a potent antibiotic. This means that ingesting it can destroy the microbial balance of our digestive tract. Moreover, the body has not developed a way of removing this artificial toxin effectively, as we have not evolved to counter it. Glyphosate disrupts bodily function and can lead to cancer. Considering how powerful Big Ag is (and its sister industry, Big Pharma) it's not surprising that this situation occurred. Despicable, but not surprising.

This issue is related to the recent post about falling fertility. I meant to reply about it and forgot.

One of the big causes of infertility is weight gain and hormonal disorders like PCOS. A big factor in both is insulin spikes which are cause by an imbalance in gut bacteria. It's been found that fat people can mostly lose weight but can't keep it off because they have the gut microbiome of a starving person (super efficient and highly inflammatory) even though they are the opposite of starving. This also is causing a hugh problem of autoimmune disorders particularly in women.

Personally I've lost 2 stone over lockdown changing nothing but cutting out gluten. But I don't buy that gluten is evil because a couple of decades ago only a tiny minority of people had a problem with it. The problem is that Round Up kills the healthy bacteria in your gut which would help break it down so people with perfectly healthy genes are now suffering symptoms similar to celiac. If many people are carrying an extra 30 pounds or more due to our food being screwed up that would account for much of the obesity epidemic.

Your right; the issue isn't gluten itself. Our ancestors consumed regular, gluten-filled bread for generations. Some things have changed: most ancient breads were sourdough in some way, and these bacteria helped break down some of the gluten before we digested it. The grains they used were also more nutritious and grown on less depleted and degraded soil. These factors, combined with your correct statement regarding the destruction of a healthy gut microbiome, produce our current health situation (at least in part). The best way to restore gut health is through dietary changes: consuming raw milk, fermented foods (such as sauerkraut, kefir, and kombucha) pastured meats, and animal fats combined with nutrient dense foods (liver) is a diet that can restore failing health and body balance. As the amount of environmental toxins continues to rise and assail our bodies, having a healthy, natural diet becomes increasingly important.
