All of us, myself included, buy phones which track us all the time. I'm sure a significant amount of the population, at least in Canada, would buy this with their hard earned money

    Yesssss exactly. You should check out Purism's Librem 5 phone. It is entirely open source and has a hardware killswitch for the mic and networks and whatnot. Also, for networking, you should check out the IPFS network. Its the peer to peer world wide web!
