I think glyphosate is directly responsible for the sudden wheat allergy epidemic. Excessive amounts of glyphosate is used on wheat, in increasing amounts over the last few decades because of a process called desiccation where they spray it right before harvest to help separate the wheat from the chaff by killing the chaff. It seems obvious this would also get all over the wheat, and in to our food.

It's possible. It has a lot of weird/fucked up effects. Tomorrow I will post something about Monsanto in Argentina so make sure to check out those posts.
